Kappa Vevichathu / Mashed Tapioca /Yuca / Cassava with Spices and Coconut

Today I am sharing with you Kappa Vevichathu / boiled and mashed Yucca root seasoned with ground coconut and spice mixture and is usually served with hot Red Meen Curry, a match made in heaven, isn’t it?
I remember when I was hospitalised in 8th grade with 105 degree fever; my grand mom came to visit me and whispered in my years, “Shall I bring.." 


Preparation Time – 15 minutes
Cooking Time – 20 minutes
Servings – depends on how much one consumes

Semiya Payasam-Vermicelli Kheer-Vermicelli Pudding

This dessert recipe is so familiar and a very common, popular sweet accompaniment of India with lunch or dinner. Almost all Indians acknowledge it and all would have tasted it at some point of time. 


I love the aroma that you get while roasting the semiya in ghee. It takes me to nostalgic memories. My mom sometimes add fried coconut pieces too along with cashews and raisins. 

Ingredients:
1. Broken Roasted Vermicelli - 2 cups
2. Ghee – 2 tbsp
3. Skimmed Milk - 4 cups (1 cup = 250 ml)

Chana Dal Masala / Spicy Split Chick Pea Lentil /


Lentils always have been and always will be the comfort food, which provides you load of proteins. It is a staple food of India. Each parts of India has its own version of cooking each kind of dal. The recipe calls for all those basic ingredients and probably you may have these in your pantry.

It can be served with Chappathi / Roti or steamed rice.

Classic Plain Home Made Bread / Basic Bread

Fish Molee

Fish Molee, as everybody knows is a very popular side dish of kerala. Molee is a name given to girls in kerala homes!! That’s the funny part of this word when it relates to the fish. Molee means, stew where fish is stewed in Coconut milk and hence its name Fish Molee.


We make this specially on festive days and on special occasions like Christmas and Easter..

Ingredients:

For Marination:

(1) Fish Fillets – ½ kg
(2) Pepper Powder – 1 ½ tsp
(3) Turmeric Powder – ¼ tsp
(4) Salt – to taste
(5) Vinegar or lemon juice – 1 tsp

For the gravy:

(6) Onion big - 3 medium sized (julienned)
(7) Tomato - 2 medium sized (chopped)

This is Kerala’s essential and unavoidable dish / ozhichu koottan in almost every family, especially in every Christian home of Kerala.. It goes well with rice.

 Personally speaking I have very fond memories with regard to this curry. My dad is from Kuttanadu, Changanacherry of Kottayam district of Kerala, the southernmost state of India. Chicken Fajitas

Fajita is a traditional Mexican Dish which is a very common in Mexican restaurants. The term refers to any grilled meat served wrapped in a tortilla. Fajitas are available in different types / many kinds including chicken, beef or shrimp fillings or only with vegetable fillings..

When I made this it was totally a different experience and I was so happy for the original and colourful look of Chicken Fajitas that I made. Doesn’t it it look like Chicken Shavarma? We both enjoyed it like anything and it was of course better than Chicken Shavarma  so you can also definitely make this restaurant quality Fajitas!!

Here is how to make a typical Chicken Fajita. 

Ingredients:

(1)Tortillas – 4 
(2)Cheddar cheese (grated) – ½ cup (optional)
(3)Sour cream – 3 tbsp (optional)

French Beans Thoran with Split Bengal Gram

The word Thoran is often associated with South India. It’s a very common side dish during lunch and dinner along with rice in South Indian states. The very famous thorans from Kerala are Cabbage thoran, Carrot thoran and Beans thoran.. The list goes endless. This is the recipe of easy and filling Beans and split Bengal gram thoran. Have you heard about ‘Poor Man’s Meat? It is Beans, because it has a great source of Protein, Vitamin A, Vitamin C, Calcium. Potassium, Magnesium and iron.


Try this thoran. I am sure that you will love it. I should say that the end product would be superb.

(1)Beans (chopped to small round pieces) – 250 grams
(2)Split Gram Peas – ¾ th cup

Potatoes are a rich source of carbohydrate content. 


Baby Potatoes look so attractive. They are so sweet looking for our eyes. .. Isn’t it?  There is very little chance to go wrong with potato dishes. Baby potatoes transform to a delicious and irresistible one if we cook it either with other vegetables or with any other ingredients and spices.

Chocolate Banana Cake

Hello my blogging readers, here’s a very easy to prepare and super simple Chocolate Banana Cake with Chocolate ganache that glazed this cake.. This cake recalls my mom’s best baking cup cakes and round cakes.. It’s the best recipe for any celebration!!
